Food as medicine — grown in our soils, cooked in our kitchens, served at our tables.

Every meal at Holos begins with the land. Organic ingredients harvested from our gardens and partner farms are prepared as a daily ritual of nourishment and care.

An invitation

The kitchen at Holos is the slowest, most patient room on the ridge. Most of what arrives on the table came out of the gardens that morning — chayote and chicasquil and a hundred kinds of herb you may not have eaten before. The rest comes from neighboring farms inside the valley.

We treat food as medicine, but we also treat it as joy. The cooking is unhurried and generous, attentive to the bodies it is feeding — what they have been through, what they are doing today, what they are sleeping toward. People often write to us months later about the meals.

Whatever you need — vegan, raw, omnivore, gluten-free, three specific allergens you developed last spring — say so on the way in and we will hold it. The kitchen is one of the places this work begins.
